Join us in the kitchen as we show you how to make a delicious and healthy Blueberry and Almond Cake that is safe for your dog to enjoy.

We understand that our pets have become a part of our families, and they deserve some extra love on special occasions like Mother's Day. However, it's important to remember that dogs have different dietary needs than humans. So, it's crucial to create treats that are not only tasty but also safe for them. Today, we'll be using dog-friendly ingredients and avoiding harmful substances like chocolate and xylitol. This recipe is all about celebrating your bond with your fur baby while keeping their health and well-being in mind.

Recipe and Method:

Dr. Nicole's Blueberry and Almond Fur Mum Cakes

Ingredients:

  • 2 and 1/2 cups almond meal
  • 1 and 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup melted coconut oil
  • 1/3 cup honey
  • 1/3 cup plant-based milk
  • 1/2 tsp vanilla extract (avoid licking raw batter as it contains alcohol)
  • 3 large eggs (at room temperature)
  • 3/4 heaped cup blueberries (frozen or fresh)

Method:

  1. Preheat your oven to 180 degrees Celsius (fan-forced).
  2. In a medium bowl, combine the almond meal, baking powder, and salt. Mix well.
  3. In a separate bowl, combine the melted coconut oil, honey, plant-based milk, vanilla extract, and eggs. Stir until all the ingredients are well incorporated.
  4. Gradually add the dry ingredients to the wet ingredients and mix until you have a smooth batter.
  5. Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
  6. Divide the batter among 12 cupcake cases, filling them about three-quarters of the way.
  7. Place the cupcakes in the preheated oven and bake for approximately 22-24 minutes or until a toothpick inserted into the centre comes out clean.
  8. Once baked, remove the cupcakes from the oven and let them cool for about 5 minutes.
  9. To serve, you can top each cupcake with a dollop of fresh Greek yogurt and a sprinkle of cinnamon.
